Here’s a nice little breakfast to make yourself that I just made up using what I’d bought at the market. The recipe is for two people, so just adjust the quantities as you need.
Melt a knob of butter with a little oil in a frying pan.
Add two fat Italian sausages and begin to cook as you ordinarily would cook a sausage.
Once the sausages have started to crisp up and brown, but aren’t quite cooked all the way through, add a generous handful or two of cherry tomatoes. Chop larger ones in half. Season the tomatoes with salt and pepper.
Cook the tomatoes until they start to blister and go jammy. Give them a stir around the pan every now and again so they soak up the juices from the sausages.
When the sausages look like they’re nearly done, spread two slices of bread with butter. I bought my bread by the slice from the little deli near our Airbnb, but any bread will do.
Heat a frying pan over a high heat and place the bread, buttered side down, into the pan and toast it until it’s golden and crispy. Turn the bread over and toast the other side. If you really wanted, you could butter both sides of the bread. I wouldn’t judge you.
Once the bread is done, and the sausages cooked, pop a piece of bread on a plate, line a sausage up next to it and spoon some of the tomatoes and their juices over the bread. Season with more salt and pepper.
Eat green grapes that you’ve kept chilled in the fridge while you cook your breakfast.
